Here is another super healthy, amazingly delicious and surprisingly easy meal for you to try!!
Moussaka...
Did you know that Moussaka actually originates from Lebanon not Greece? The Lebanese original is simply eggplants, olive oil, garlic, onions and tomatoes and then a Greek chef came along and took this simple dish and added béchamel sauce and meat. So the béchamel sauce would be delicious with all it's creamy, milky buttery ingredients but not at all healthy so here is my clean meat eating Moussaka that will make you feel like you aren't missing out on anything!
Ingredients
500grams of lean lamb mince
1tsp coconut oil
2 small brown onions, finely chopped
4 gloves of garlic
400grams of tinned chopped tomatoes
4tbsp of tomato paste
1/4tsp ground cinnamon
4tbsp chopped flat leaf parsley
200grams of ricotta or feta cheese
Directions
1. Preheat oven to 180°C.
2. Salt eggplant slices on both sides for one hour. Rinse the eggplants under cold water and pat the slices dry. Brush the eggplants with a little olive oil and pan fry over high heat until lightly browned. Set aside.
3. Heat 1 tbsp of coconut oil in a non-stick fry pan and sauté onions over low heat for 4-5 minutes. Add the garlic and cook for a further 3 minutes or until onion is soft. Add the mince and cook, stirring to break up lumps, over a high heat until meat is browned. Add tomatoes, tomato paste, cinnamon and parsley and bring to the boil. Reduce heat and simmer covered for about 20 minutes, or until most of the liquid has evaporated. Season to taste.
4. To assemble (similar to a lasagne), place 3-4 slices of eggplant in the bottom of a baking dish then add lamb mixture then sprinkle with some cheese. Repeat layering until ingredients have been used.
5. Place baking tray in the oven and cook for 10-15 minutes or until golden on top and cooked through. Serve with a green leaf salad.

Just the beginning...
You should remember my client Ritchie who featured in my blog in April...Ritchie, last month completed his 12 week Transformation and what a transformation!! These photos were taken on the 25th February 2013.

1. Going in to the Transformation, what was your
number one goal?
Lose weight and get toned. Also, being overweight
was affecting how long I lasted on the soccer field. After the transformation I
was able to play for 90 minutes, something I hadn't done in a few years.
2. Do you feel you achieved what you set out to
achieve?
Yes mostly. I wouldn't have minded a 6 pack but
that was my fault as I still went out and had a few drinks on a Saturday night.
I lost almost 10kgs so I'm not complaining!
3. What did you enjoy most
about the Transformation?
Being able to wear
everything in my wardrobe. Even those t-shirts we all have in our wardrobe that
we will wear "one day"! Seeing the change in my body was great!
4. What was the biggest
thing you learnt from doing the Transformation?
How I realised everything I
knew about diet was wrong. I actually ate more food during the transformation
but it was the "right" food. Didn't get hungry during the
transformation because you're eating five smaller meals a day.
5. What did you find the
most challenging about the Transformation?
Preparing all the food.
It's a lot of meat to cook. Then I found out about Muscle Meals Direct and it
got soooo much easier. Leg day was also a my least favourite day!
6. Now that you have
completed the Transformation, have you set any new goals concerning your health
and fitness?
Yes I want to lose another
few kilos and put on some more lean muscle. I would like to get down to 80kgs.
And the next major goal though is to quit smoking. With two young girls they
are starting to notice me smoking and I don't want them to remember me as a
smoker!
7. Would you recommend a 12 weeks Vivid Fitness
Transformation to someone wanting to get in shape? If yes, why?
Yes I would because
it works; it's that simple!
To say I am proud of Ritchie would be an understatement! But what I am most excited about is his new found love for health and fitness, wanting to continue to grow and push himself and be an even better role model for his young daughters! I am looking forward to what the next 12 weeks bring and how much more changes Ritchie can bring about! He has got it in him to be even more amazing than he already is!

Protein balls...
The easiest, cleanest treat I ever did see!! Super yummy, healthy chocolate protein balls that take a whole five minutes to make, include all the macro-nutrients and will stop you reaching for the tim-tams!!
Ingredients ::
* 1 scoop of chocolate protein powder {I am currently using VPX Zero Carb available here from CSA}
* 1 tablespoon of honey
* 1 cup of uncooked oats
* 30 grams of coconut flakes
* A splash of water
Directions ::
1. Mix all the ingredients in a bowl until combined
2. Roll the mixture in to small balls
3. Roll each of the balls in a pinch of coconut flakes
4. Put in the fridge for 30 minutes before eating
5. Store in the fridge in a tupperware pot
The above amounts made me seven balls. The only problem with these balls is it is hard to stop at just one!

BCAA...
My Branched Chain Amino Acid has a nickname and it is gummi berry juice. Do you remember the cartoon The Gummi Bears and they used to drink it and they would go bonkers bouncing all over the place! That's kind of how I feel when I have my BCAA intra work-out, training without wouldn't be the same!
My favourite is the Gaspari Nutrition Aminolast which you can get here from Complete Supplements Australia. Not only does it taste amazingly sweet like lolly water but there are actually heaps of benefits to using the supplement and reasons why you should be including BCAA in your supplement regime.
So, your BCAAs include leucine, isoleucine, and valine which are the acids that support anabolic muscle building, high-intensity endurance training, improvement of mental function and mood, to name just a few. These are the essential amino acids that our body doesn't make so we need to ingest them through our food (high protein foods such as meat or whey) and supplementations. The coolest thing about BCAA is they trigger protein synthesis, increase energy expenditure and have been shown to improve glucose tolerance.
The amino acids have a branched side chain which helps our body convert amino acid into energy during intense exertion. The more BCAAs that are present in the muscles, the more they will be used for energy, slowing the breakdown of muscles cells and preventing catabolism (metabolic breakdown of complex molecules).
Here are some more reasons why you should be taking BCAA...
1. They enhance muscle protein synthesis
BCAA supplementation results in maximal protein synthesis due to the increase of intracellular availability of amino acids and activates the mTORC1 signalling pathway that is essential for muscle building.

Estrogen...
If I was to ask you what role Estrogen plays in our bodies could you answer me? We all know it's there and that it is important but how many of us really know it's purpose?
I was fortunate enough last week to be a part of one of Luke's seminar which he put together whilst I was away in the USA. The topic of the evening was the ever allusive Estrogen!
So to answer the question :: Estrogen is a hormone produced primarily in the ovaries for woman and testes for men. It is also produced in fat and the brain in both men and woman. Woman require Estrogen because its responsible for proper female reproduction and is necessary for a healthy pregnancy, it regulates mood and arterial function, builds bone density and regulates most hormones from the Hypothalamus in the brain (responsible for insulin, leptin, grehlin production). Men require Estrogen for healthy sperm production and bone maintenance
Unfortunately, our bodies aren't only exposed to Estrogen by our own making! There are lots of other external factors that can cause our bodies to have higher levels of Estrogen which can have not so good effects.
And Luke's Top 10 ways to lower your Estrogenic load
* Improve gastrointestinal health by taking a quality Pro-biotic. Pro-biotics support good bacteria in the gut and promotes the E2 pathway
* Improve diet with lower carb and higher protein. Insulin and body composition and amino acids found in protein help with Estrogen detoxification via the liver
* Eat lots of healthy Omega 3 fats. Omega 3 fats promote the E2 pathway and blocks the enzyme called Aromatase. Aromatase is an enzyme that is responsible for a key step in the biosynthesis of Estrogen
* Decrease Body fat :: Fat tissue increases levels of aromatase enzyme which turns testosterone to Estrogen
* Eat more phytoestrogens :: leafy greens, flaxseeds, legumes, sesame seeds, broccoli and cauliflower

* Cook with more turmeric which is tremendous in supporting digestive health

Beans...
Baked beans remind me so much of my childhood. I love baked beans with eggs on toast. Simon loves Heinz Baked Beans on toast with grated cheese. I don't tend to eat the Heinz beans as they have a bit of added sugar in them. This little sucker has 10grams of the stuff!
Want a healthy version of the old baked bean classic? Well here it is...
Ingredients
* 1 tin of cannellini beans
* 2 tbsp. olive oil
* 1 brown onion, finely chopped
* 2 cloves of garlic
* 1 tbsp. fresh thyme leaves
* 500grams of blended tomatoes
* 200grams of sliced bacon (fat cut off)
Instructions
1. Heat oil in a saucepan then add bacon, chopped onion, crushed garlic and thyme leaves
2. Drain and rinse the cannellini beans and add these to the saucepan along with blended tomatoes
3. Cook on a low heat until you have the desired consistency. Some like their beans runny, some a little dryer; we had has medium!
4. Serve with your choice of eggs; mine were poached
So delicious and you have a portion of all your required macro-nutrients

Carbohydrates :: cannellini beans
Fats :: olive oil and egg yolk

Sprints...
Ok, so we all know that cardio is not my favourite thing in the world! It is a struggle for me to do cardio with any kind of consistency and even with my week planning I do tend to talk myself out of cardio in favour of lifting. I love lifting, it's my thing and I get results from pushing weights. Although in saying that, when I do a few weeks of consistent cardio sessions, I do notice changes in my body and then when I am lifting I feel fitter and leaner!
If I told you that there was a much better, more effective form of cardio which didn't involve 45 minutes of slow and steady on the treadmill, cross-trainer, bike {or any other form of torture} would you believe me?
I have been doing a form of cardio that doesn't bore me to tears or have me running for the weights room. A form of cardio that is short, sharp, gets you sweaty and has you feeling like you are on top of the world when you have finished!
Sprint intervals!
Once you get going they are awesome and empowering! And I don't just love them because they are short and over with quickly, there are so many other reasons why sprint intervals will get your body where you want it to be....
1. By doing sprints you will increase your post exercise oxygen consumption, effectively increasing your metabolic rate and energy use after the sprint work-out
2. You will burn a lot of calories quickly, enhancing the use of enzymes and proteins that are involved in using fat as your body's preferred source of fuel
3. Sprint training will build muscle and increase the size and strength of fast-twitch fibres {muscle fibres that contract quickly and release energy rapidly}. With the right nutrition and recovery, sprinting will enhance protein synthesis {in short muscle building and repair} leading to muscle building

And not only do sprints make you look stronger, fitter and leaner they are also great for your all round health and well-being....
Better heart and lung health, improved circulation, better cognition, improved metabolism, and the optimal hormonal environment. And most important for me they save my sanity from boring slow and steady cardio!
Here are a two sprint interval work-outs that my clients just love doing {well, I think they do}!!!!
In the gym :: pick your equipment :: bike, treadmill, rower, cross-trainer
A1. Foam roll
B1. Two minute warm up at 50-60% MHR
C1. Intervals - 15 sets - 30seconds active / 30seconds recovery - 15 minutes total
D1. 3 minute cool down
E1. Stretch
Outdoors :: download the application Round Timer :: set to 1minute active / 30seconds recovery
A1. Stretch
B1. Two minute warm up at 50-60% MHR
C1. Intervals - 15 sets - 1minute active / 30seconds recovery - 10 minutes total
