Beans...

Baked beans remind me so much of my childhood. I love baked beans with eggs on toast. Simon loves Heinz Baked Beans on toast with grated cheese. I don't tend to eat the Heinz beans as they have a bit of added sugar in them. This little sucker has 10grams of the stuff!


Want a healthy version of the old baked bean classic? Well here it is...

Ingredients
* 1 tin of cannellini beans
* 2 tbsp. olive oil
* 1 brown onion, finely chopped
* 2 cloves of garlic
* 1 tbsp. fresh thyme leaves
* 500grams of blended tomatoes
* 200grams of sliced bacon (fat cut off)

Instructions
1. Heat oil in a saucepan then add bacon, chopped onion, crushed garlic and thyme leaves
2. Drain and rinse the cannellini beans and add these to the saucepan along with blended tomatoes
3. Cook on a low heat until you have the desired consistency. Some like their beans runny, some a little dryer; we had has medium!
4. Serve with your choice of eggs; mine were poached

So delicious and you have a portion of all your required macro-nutrients
Protein :: egg whites and bacon
Carbohydrates :: cannellini beans
Fats :: olive oil and egg yolk
